There are a lots of factors why natives talk differently. For example, It may based on their regional accent, generation, just their style, whether they talk casually or professionally. So these are some of the reasons why natives can be difficult to understand.
Now, why is it difficult for you to understand some native speakers?
It could be, because you are not exposed to “Real Natural Italian”. Simple as that, don’t make it complicated. And just assume they are right because of the fact that they are the real speaker of the language.
